Oh my sweet pepita

I did it – I’ve been saying every Halloween for years that I’m going to roast the pumpkin seeds and this year I finally did it.

It is indeed ridiculous easy.

Step 1 – find a small child who believes that taking the slimey guts out of a pumpkin is a fun task (check!)

Step 2 – de-slime the seeds and let them dry a bit

Step 3 – search the interwebs for instructions on how to roast the seeds that have been de-slimed. Step 4 – follow the instructions for roasting. They aren’t tough. After rinsing the slimy stuff off – you need some time, a few baking sheets, a little bit of olive oil and some seasonings if you so desire.

Step 5 – about an hour later – I had two batches of pumpkin seeds – one sugar and cinnamon, one with kosher and season salts

All in all about an hour (mostly non-work) and I can check that off the Halloween mommy-to-do list.
